Herring Fillets


The soused herring (maatjesharing or just maatjes in Dutch, or Matjes/matjes in German and Swedish respectively) is an especially mild salt herring, which is made from young immature herrings. The herrings are ripened for a couple of days in oak barrels in a salty solution or brine.

Herring is prepared in a specific Dutch way and is seen as a great seasonal delicacy.

Salted and marinated fish. If you want to treat your taste buds with something salty and marinated in the most fragrant spices, get a herring. A few slices of light bread and a slice of fresh lemon and you’re ready to feast. Now all you have to do is choose herring. One bite is never enough!
