This cheese is so good, aged enough to have developed those little calcium lactate crystals that give it that extra burst of flavor. I bought 6 of them my last order, but it’s been out of stock since. I have been unable to find anything as good anywhere else here in Türkiye. The other mature chedder that Isthambul offers isn’t bad, it’s just not as flavorful as this one and doesn’t have the crystals that mark a really good extra-mature cheddar. Please, please try to restock it if at all possible. I would buy a case (not joking).
